母国情緒II
走在尖沙咀,印度鄉里把傳單塞到我手“噢斯噢斯----一支巴!”
是印度餐館的菜單,走著看,原來大有日本人市場的嘛。
走不過兩步,又一個印度人走來把傳單塞來,哎呀,都照單全收好了。還沒接到手,先前那位很氣沖沖走過來,在我面前,指住同胞“你是摩羅”(ni se mo no)。
我笑了笑,你就是問我也搞不懂哪是摩羅哪是真貨。

我愛潮式打冷。
小時候爸經常帶我去牛頭角下村的夜市大排擋。有瀨尿蝦也有凍花蟹,一邊吃一邊告訴我,蝦頭上一大條刺用來打架,蟹是外骨骼以凡下的節枝類動物,和蜘蛛有關連,偶爾會說到達爾文的進化論,去大排擋吃飯就好比參觀一次水族館。大概,對自然科學的興趣是那時候培養起來的。
一直都沒過問爸為什麼這樣喜歡潮州菜。一月上廣州時姨丈說,我爸年少行船,曾經在潮州待過好一段日子。

嫩滑的白切雞鋪上麻辣海哲,還有一大堆香蔥香料,灑上特製醬汁,非常香口。回鍋肉是今先生點的,他說在中國吃過一次,問這裡的食味正宗不正宗,我總是聯想到罐裝那種回鍋肉,沒什麼好印象,所以一次都沒吃過。這個呢我沒吃太多,他們說佐酒很好。
沒一兩碟滷水不能算打冷,滷水鵝賣光也得點個墨魚或什麼的,別理膽固醇了。淋上的醬汁有點微辣,大口大口的咬墨魚,大家都好痛快呢。
標準的香港風味。其實這十多年都沒怎樣改過。

雖然一直都是住私家屋苑,但因為中小學分配的教育系統,童年有一半時間都是在牛頭屋村渡過的。我是回到香港才知道牛頭屋下村快要清拆。其實沒什麼難能可貴或特別要懷念的事,也只不過是一點點回憶罷了。
這家金利來大排擋最少有十三、四年了。還是小學生時,晚上我媽沒做菜,我會走過來要個外賣粟米肉粒飯。
所以我想,帶日人朋友到屋台,亦不失為地道的招待,好讓他們也親身體驗一下我長大的地方。又據說,日本學中國,食事文字樣樣都學。唯獨是一板一眼的日本人,就是怎樣都學不會中菜那個爐火鑊氣的手法。

這些菜多好看!掉口水了。
日本人完全不會做這種濃重的菜,連起個油鍋都不大會的。就是那“嚓啦”一聲。
